Orchard Wit
Brewing this over the Thanksgiving holiday. It’s actually an attempt at cloning Unibroue’s Ephemere Pomme. I don’t really have any ideas on what’s in there so the recipe itself is actually a clone of one of their other beers, Blanche de Chambly. I figure it will make a good beer by itself, and I can add the apple flavoring to taste to see if I can match Ephemere.

I brewed this on 11/26 and it is still in the primary. The krausen hasn’t settled yet, which I thought was due to low temperatures in my basement. It’s been in the warmer room down there for 4 days now and there’s still a good foam on top of it. I’m going to rack it to secondary this weekend even if that doesn’t change and just be ready with a blowoff tube.
